What I Eat in a Day #2

I have been on a health kick, and it’s been going better than expected. I have been indulging in healthy flavoured overnight oats, trying different soups, and focusing on plant-based and pescetarian protein sources. I feel lighter, and I go to bed feeling so nourished every day!

Believe it or not, when I decided I wanted to start making overnight oats, I didn’t have a single jar to do it with. When I went to the store looking for a simple mason jar, I noticed these beautiful quilted glass jars and picked one up for my oats. This morning’s was a half cup of oats, some oat milk, coconut almond vanilla Vega protein with hemp hearts and a cup of frozen blueberries. The protein powder adds flavour and helps make this a more filling breakfast.

For lunch, I ate a bowl of soup. I have made so many versions of this African peanut stew over the years. You can find an easy base for this recipe on the Budget Bytes blog! I replaced collard greens with kale (I get organic pre-shredded kale in a bag from the supermarket), and I added a large can of chickpeas along with half a block of very finely chopped firm tofu for extra protein.

Then it was time for a snack that sort of turned into dinner. Have you tried the Just Egg before? I hadn’t until today, but I decided to finally check the nutrition label before grabbing my usual dozen. Even though eggs taste good, I have familial risk factors for cardiovascular disease, so I was open to trying it. There are 11 grams of protein in each 1/3 cup of the liquid.

It looks convincing enough! However, I find the taste to be a bit bland. It feels filling like an egg would, but the texture is just a tad airier than real egg (less dense) and that eggy flavour isn’t there. I didn’t not like it, but you can’t expect a true egg flavour. This might seem obvious, but some vegan alternatives have been realistic enough that I go in with an open mind.

I had the egg with a mini tortilla and some bell peppers and the hot salsa from Tostitos.

I’ll need to try it again before I make a final decision on how much I like it!

After the egg tortilla, I veered off course a little with a chocolate chip muffin from Tim Horton’s with a glass of oat milk while I watched TV and browsed on my laptop. Oops! I had this in the fridge from a Too Good To Go box I had picked up last week. Can you believe this single muffin has a whopping 420 claories? A lot of Tim’s muffins come in somewhere around 300, so I was surprised to see that my least favourite flavour (chocolate chip) came in at so much more! Oh well.

After all the food from today, I enjoyed sipping on a can of mango Bubly (not pictured). I was looking for this canned kombucha I have bought before when I spotted it (I didn’t find the booch in the end). Picked it up for a little guilt-free indulgence. It’s just flavoured water, but the mango one’s my favourite flavour so far!
