What I Eat in a Day #3

Today was a busy day, and I felt a bit under the weather, but luckily I had plenty of African peanut stew to keep me going. I was planning on getting breakfast on the go, but I decided to spend a little more time at home and make oatmeal and a coffee at home. So breakfast was some instant coffee with oat milk and some rolled oats with honey and a tablespoon peanut butter.

Didn’t have a chance to grab a proper lunch, so I had three mandarin orange cuties.

I was glad to come home to my African peanut stew, and I decided to pair it with an Italian bread roll and a quick salad of cucumbers, tomatoes, a little red onion and spring onions.

My midnight snack was two persian cucumbers chopped up with some smoked tofu and another dinner roll. So I may have skipped lunch but I made up for it with two dinners. 🙂
